If I ever leave Utah for good, I would miss fall the most. There is something special about the brief moments of fall in Utah. Maybe it’s the stunning technicolor leaves that I never spend enough time admiring or the last haul of vegetables from my garden (which I thankfully remembered to cover before the first frost this season!). Or possibly it is the fact that we forget to complain about the quality of air for a moment and we rush to enjoy the biking and hiking before the “pray for snow” parties begin. I always want it to last just a little longer.

At Pago, fall signifies more than the change of colors, it reminds us that wine is not just something you grab off the shelf year round, but it is an agricultural product. Each year winemakers toil endlessly to ensure the entire years’ worth of nurturing results in mature and healthy fruit. Although I have only worked portions of harvest, I liken the work load to opening a restaurant, yet it happens every year! The sleepless nights, the planning, the expense, the stress and then the ultimate celebration and sense of accomplishment that follows. What makes a restaurant opening or a harvest truly memorable, is the people you share it with. For the past 5 harvests, we have celebrated two or our favorite Utah artisans, Ruth Lewandowski Wines and Frog Bench Farms. Chef Phelix is back in the kitchen and planning a hearth driven feast to keep you warm and satiated. Join us for one of our favorite (and quickest to sell out) events of the year.

Hope to see you there!

Cheers,

Scott Evans, Founder/President, Pago Restaurant Group
